  1. Rinse the lentils and cook them in boiling water until tender. Drain and set aside.
  2. Preheat the oven to 350°F (175°C).
  3. In a pan, sauté the onion and garlic in olive oil until translucent.
  4. Add the carrot and celery and cook until softened.
  5. In a large bowl, combine the cooked lentils, sautéed vegetables, parsley, thyme, eggs, breadcrumbs, cheddar cheese, salt, and black pepper. Mix well.
  6. Transfer the mixture to a greased loaf pan and smooth the top.
  7. Bake in the preheated oven for 45-50 minutes, or until the loaf is firm and golden brown.
  8. Remove from the oven and let it rest for 10 minutes before slicing.
  9. Serve the cheese and lentil loaf warm.
