Cheese and Lentil Loaf
Lentils are a great source of plant-based protein and are often used as a meat substitute in vegetarian dishes.
This is vegetarian, gluten free and high protein recipe. Dish can be prepared in 90 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 14.

Rinse the lentils and cook them in boiling water until tender. Drain and set aside.

Preheat the oven to 350°F (175°C).

In a pan, sauté the onion and garlic in olive oil until translucent.

Add the carrot and celery and cook until softened.

In a large bowl, combine the cooked lentils, sautéed vegetables, parsley, thyme, eggs, breadcrumbs, cheddar cheese, salt, and black pepper. Mix well.

Transfer the mixture to a greased loaf pan and smooth the top.

Bake in the preheated oven for 45-50 minutes, or until the loaf is firm and golden brown.

Remove from the oven and let it rest for 10 minutes before slicing.

Serve the cheese and lentil loaf warm.
