In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, and sauté until softened.

Add the chopped celery and potato to the pot, and cook for another 5 minutes.

Pour in the vegetable broth and bring to a boil. Reduce the heat and simmer for 15-20 minutes, or until the vegetables are tender.

Using an immersion blender or a regular blender, puree the soup until smooth. Return the soup to the pot and stir in the heavy cream. Season with salt and pepper to taste.

Meanwhile, preheat the oven to 375°F (190°C). Slice the baguette into thin slices and arrange them on a baking sheet. Toast in the oven for about 5 minutes, or until golden brown.

Crumble the Stilton cheese over the toasted baguette slices and return to the oven for another 2-3 minutes, or until the cheese is melted.
