Cut the cauliflower into florets and blanch them in boiling water for 5 minutes. Drain and set aside.

Wash the kale and remove the tough stems. Chop the leaves into bite-sized pieces.

In a large skillet, melt the butter over medium heat. Add the garlic and cook until fragrant.

Stir in the flour and cook for 1 minute. Gradually whisk in the milk until smooth.

Add the grated cheese and stir until melted and well combined.

Season the sauce with salt and pepper.

Add the cauliflower and kale to the skillet and toss to coat them in the sauce.

In a small bowl, combine the bread crumbs with a pinch of salt and pepper.
