Cauliflower Au Gratin

Preheat the oven to 350°F (175°C).

Cut the cauliflower into florets and blanch them in boiling water for 5 minutes.

In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute.

Gradually whisk in the milk, stirring constantly until the sauce thickens.

Remove from heat and stir in half of the grated cheese. Season with salt and pepper.

Place the cauliflower florets in a greased baking dish and pour the cheese sauce over them.

Sprinkle the remaining grated cheese on top.

Bake in the preheated oven for 25-30 minutes until golden and bubbly.

Let it rest for 5 minutes before serving.
