Preheat the oven to 350°F (175°C). Grease and flour two loaf pans.

In a large bowl, combine the grated carrots and ginger.

In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

In another bowl, beat together the vegetable oil, granulated sugar, brown sugar, eggs, and vanilla extract until well combined.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Divide the batter evenly between the prepared loaf pans.

Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let the loaves cool in the pans for 10 minutes. Then transfer them to a wire rack to cool completely.

In a small bowl, beat together the cream cheese, powdered sugar, and lemon juice until smooth.

Once the loaves are completely cooled, spread the ginger cream cheese frosting over the top of each loaf.
