Preheat the oven to 180°C (350°F).

In a bowl, grate the carrots and set aside.

In a separate bowl, mix the flaxseeds, all-purpose flour, baking powder, cinnamon powder, and salt.

In another bowl, whisk the eggs, vegetable oil, brown sugar, vanilla extract, and milk.

Gradually add the dry ingredients to the wet ingredients, mixing well.

Fold in the grated carrots.

Grease a muffin tin or line with muffin liners.

Spoon the batter into the muffin cups, filling each about 3/4 full.

Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.

Remove from the oven and let the muffins cool in the tin for 10 minutes.

Transfer the muffins to a wire rack to cool completely.
