  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. Grate the zucchini and squeeze out excess moisture.
  3. In a large bowl, combine the grated zucchini, all-purpose flour, granulated sugar, brown sugar, baking powder, baking soda, salt, ground cardamom, ground cinnamon, ground nutmeg, and instant coffee powder.
  4. In a separate bowl, whisk together the eggs, vegetable oil, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and mix until well combined.
  6. Fold in the chopped walnuts.
  7. Pour the batter into the greased loaf pan and smooth the top.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Remove from the oven and let the bread cool in the pan for 10 minutes.
  10. Transfer the bread to a wire rack to cool completely.
  11. Once cooled, sprinkle with powdered sugar.
  12. Slice and serve.
