In a large saucepan, combine sugar, butter, heavy cream, corn syrup, vanilla extract, and salt.

Cook over medium heat, stirring constantly, until the mixture reaches 245°F (118°C) on a candy thermometer.

Remove from heat and pour the mixture into the prepared baking dish.

Let it cool for about 1 hour.

Cut into small squares or rectangles.

Wrap each caramel in wax paper or parchment paper.
