Cut the pineapple into small pieces.

In a frying pan, caramelize the pineapple pieces with granulated sugar and cinnamon.

In a mixing bowl, whisk the egg yolks, caster sugar, and vanilla extract until well combined.

Heat the double cream in a saucepan until it starts to simmer.

Slowly pour the hot cream into the egg mixture, whisking constantly.

Strain the mixture to remove any lumps.

Divide the caramelized pineapple among 4 ramekins.

Pour the custard mixture over the pineapple.

Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.

Bake for 30-40 minutes, or until the custard is set but still slightly jiggly.
