  2. Crush the digestive biscuits and mix with melted butter. Press the mixture into the bottom of a springform pan.
  3. In a mixing bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and sour cream.
  4. Melt the dark chocolate and fold it into the cream cheese mixture.
  5. Pour the mixture over the biscuit base in the springform pan.
  6. Bake for 50-60 minutes or until the center is set.
  7. Allow the cheesecake to cool in the oven with the door slightly ajar for 2 hours.
  8. Remove from the oven and refrigerate for at least 2 hours.
  9. Drizzle caramel sauce over the top before serving.
