Preheat the oven to 325°F (163°C).

Crush the graham crackers in a food processor and mix with melted butter.

Press the mixture into the bottom of a greased 9-inch springform pan.

In a large bowl, beat cream cheese, sugar, and vanilla extract until smooth.

Add eggs one at a time, mixing well after each addition.

Pour the cream cheese mixture over the crust in the springform pan.

Bake for 60 minutes or until the center is set.

Let the cheesecake cool in the oven with the door ajar for 1 hour.

Remove from the oven and refrigerate for at least 2 hours.

Drizzle caramel sauce over the top of the cheesecake.
