Ingredients
  • 1 head Cauliflower
  • 1 medium Red bell pepper
  • 1 medium Yellow bell pepper
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 2 tablespoon Olive oil
  • 2 teaspoon Cajun seasoning
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 stalk Green onions
  • 2 tablespoon Fresh parsley
Instructions
  1. Preheat the oven to 425°F (220°C).
  2. Cut the cauliflower into small florets. Dice the red and yellow bell peppers, onion, and mince the garlic cloves.
  3. In a large mixing bowl, toss the cauliflower florets, bell peppers, onion, and garlic with olive oil, Cajun seasoning, salt, and black pepper.
  4. Spread the mixture evenly on a baking sheet and roast in the preheated oven for 20-25 minutes, or until the cauliflower is tender and lightly browned.
  5. While the cauliflower is roasting, chop the green onions and fresh parsley.
  6. Once the cauliflower is done, remove from the oven and let it rest for 5 minutes.
  7. Transfer the roasted cauliflower hash to a serving dish and sprinkle with chopped green onions and fresh parsley.
  8. Serve hot and enjoy!
