Soak the glass noodles in warm water for 10 minutes. Drain and set aside.

In a large bowl, combine cabbage, carrots, bean sprouts, mushrooms, glass noodles, soy sauce, garlic, ginger, salt, and pepper. Mix well.

Dip a rice paper sheet in warm water for a few seconds until pliable. Place it on a clean surface.

Spoon the vegetable mixture onto the center of the rice paper. Fold the sides over the filling and roll tightly.

Heat vegetable oil in a pan over medium heat. Fry the egg rolls until golden brown and crispy.

Serve hot with your favorite dipping sauce.
