Ingredients

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the butternut squash in half and remove the seeds. Place the halves on a baking sheet, cut side down. Roast for about 45 minutes, or until the squash is tender. Let it cool, then scoop out the flesh.
  3. Cook the macaroni according to the package instructions. Drain and set aside.
  4. In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes, until it forms a paste. Gradually whisk in the milk, garlic powder, onion powder, salt, and black pepper. Cook until the sauce thickens, about 5 minutes.
  5. Remove the saucepan from the heat and stir in the cheddar cheese and half of the parmesan cheese until melted and smooth.
  6. In a large bowl, combine the cooked macaroni, butternut squash, and cheese sauce. Mix well.
  7. Transfer the mixture to a greased baking dish. Sprinkle the remaining parmesan cheese and breadcrumbs on top.
  8. Bake for 20-25 minutes, or until the top is golden and the dish is heated through.
  9. Let it rest for 5 minutes before serving.
