  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  3. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg, vanilla extract, and red food coloring.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Shape the dough into small burger patties and place them on the prepared baking sheet. Sprinkle sesame seeds on top.
  6. Bake for 12-15 minutes, or until the cookies are set. Allow them to cool completely.
  7. In a small bowl, mix together the melted white chocolate, green food coloring, and yellow food coloring to create the 'cheese'.
  8. Spread the 'cheese' on the bottom half of each cookie.
  9. Sprinkle shredded coconut on top of the 'cheese' to resemble lettuce.
  10. Place mini chocolate chips on top of the shredded coconut to resemble 'seeds'.
  11. Place the top half of each cookie on top of the 'seeds'.
  12. Allow the 'cheeseburgers' to rest for 30 minutes before serving.
