Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line a 15x10-inch jelly roll pan with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, ground ginger, cinnamon, and salt.
  3. In a large bowl, beat the eggs and granulated sugar until thick and pale yellow. Add the melted butter, molasses, and vanilla extract, and mix until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Pour the batter into the prepared pan and spread it evenly.
  6. Bake for 12-15 minutes, or until the cake springs back when lightly touched.
  7. While the cake is still warm, dust a clean kitchen towel with powdered sugar. Invert the cake onto the towel and carefully peel off the parchment paper.
  8. Starting from one of the short ends, roll the cake up tightly in the towel. Place the rolled cake on a wire rack and let it cool completely.
  9. In a small bowl, beat the cream cheese, fresh ginger, lemon juice, and powdered sugar until smooth.
  10. Unroll the cooled cake and spread the cream cheese mixture evenly over the surface.
  11. Gently roll the cake back up, removing the towel as you go.
  12. Place the rolled cake on a serving platter and refrigerate for at least 1 hour.
  13. Before serving, garnish with whipped cream and sprinkle with ground ginger.
  14. Slice and serve.
