Grease a muffin tin with olive oil.

Cut the tortillas into small circles that fit into the muffin tin cups.

Place the tortilla circles into the muffin tin cups, pressing them down gently to form a cup shape.

In a frying pan, cook the bacon until crispy. Remove from the pan and crumble into small pieces.

In the same pan, sauté the bell peppers and onion until softened.

In a bowl, whisk the eggs and season with salt and black pepper.

Pour the whisked eggs into the muffin tin cups, filling them about halfway.

Top each cup with crumbled bacon, sautéed bell peppers, onion, and shredded cheddar cheese.

Bake in the preheated oven for 15-20 minutes, or until the eggs are set and the cheese is melted and bubbly.
