  2. In a saucepan, melt the butter, golden syrup, and caster sugar over low heat.
  3. Remove from heat and stir in the flour, ground ginger, and brandy until well combined.
  4. Drop teaspoonfuls of the mixture onto a lined baking tray, leaving enough space for spreading.
  5. Bake for 8-10 minutes or until golden brown.
  6. Remove from the oven and let them cool on the tray for a minute.
  7. Carefully shape the warm brandy snaps around the handle of a wooden spoon or a dowel to form a tube shape.
  8. Allow them to cool completely on a wire rack.
  9. Fill each brandy snap with whipped cream just before serving.
