In a food processor, pulse the vanilla wafer cookies and pecans until finely ground.

Transfer the mixture to a large bowl and add powdered sugar, cocoa powder, bourbon or rum, corn syrup, and honey. Stir until well combined.

Shape the mixture into small balls, about 1 inch in diameter.

Roll the balls in chocolate sprinkles to coat.

Place the balls on a baking sheet lined with parchment paper and refrigerate for at least 1 hour to set.
