In a large bowl, combine blueberries, granulated sugar, cornstarch, lemon juice, lemon zest, and a pinch of salt. Toss to combine.

In a separate bowl, whisk together flour, granulated sugar, and salt. Add butter and use your fingers to rub it into the flour mixture until it resembles coarse crumbs.

Add cold water and vanilla extract to the flour mixture. Stir until the dough comes together. Shape the dough into a disk, wrap in plastic wrap, and refrigerate for 15 minutes.

Preheat the oven to 375°F (190°C). On a lightly floured surface, roll out the dough into a 12-inch (30 cm) circle. Transfer the dough to a baking sheet lined with parchment paper.

Spoon the blueberry mixture onto the center of the dough, leaving a 2-inch (5 cm) border. Fold the edges of the dough over the filling, pleating as necessary.
