Blueberry Dumpling Cobbler
Cobblers were first made by early American settlers, who didn’t have access to ovens. They would cook the fruit filling on the stove and then top it with biscuit dough, which would steam and cook on top of the fruit.

Preheat the oven to 375°F (190°C).

In a mixing bowl, combine blueberries, granulated sugar, and lemon juice. Toss to coat the blueberries evenly.

In a separate bowl, whisk together flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs.

Stir in the milk and vanilla extract until just combined.

Spread the blueberry mixture evenly in a baking dish.

Drop spoonfuls of the dough mixture over the blueberries.

Sprinkle brown sugar over the dough.

Pour boiling water over the top.

Bake for 40-45 minutes, or until the top is golden brown and the blueberries are bubbly.
