Blueberry Crumb Tart
Blueberries are often referred to as a ‘superfood’ due to their high antioxidant content.

Preheat the oven to 375°F (190°C).

In a mixing bowl, combine the all-purpose flour, granulated sugar, salt, lemon zest, and vanilla extract.

Cut in the unsalted butter using a pastry cutter or your hands until the mixture resembles coarse crumbs.

Press two-thirds of the crumb mixture into the bottom and up the sides of a tart pan.

In a separate bowl, gently mix the blueberries with 1/4 cup of granulated sugar.

Spread the blueberry mixture evenly over the crust.

Sprinkle the remaining crumb mixture over the blueberries.

Beat the egg in a small bowl and brush it over the crumb topping.

Bake for 35-40 minutes, or until the crust is golden brown and the blueberries are bubbling.

Allow the tart to cool for at least 30 minutes before serving.
