Blueberry-Cinnamon Muffins
Blueberries are a rich source of antioxidants and are often referred to as a ‘superfood’.

Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners.

In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.

In a separate bowl, whisk together the milk, vegetable oil, egg, and vanilla extract.

Pour the wet ingredients into the dry ingredients and stir until just combined.

Gently fold in the blueberries.

Divide the batter evenly among the muffin cups, filling each about 2/3 full.

Sprinkle turbinado sugar on top of each muffin, if desired.

Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Remove from the oven and allow the muffins to cool in the tin for 5 minutes.

Transfer the muffins to a wire rack and let them cool completely before serving.
