Preheat the oven to 325°F (163°C).

In a medium bowl, mix the graham cracker crumbs and melted butter until well combined. Press the mixture into the bottom of a 9-inch (23 cm) springform pan to form the crust.

In a large bowl, beat the cream cheese, sugar, and vanilla extract until smooth. Add the eggs, one at a time, beating well after each addition.

In a separate bowl, toss the blueberries with flour and lemon zest until coated. Gently fold the blueberries into the cream cheese mixture.

Pour the mixture over the crust in the springform pan. Smooth the top with a spatula.

Bake for 55-60 minutes, or until the center is set and the top is lightly browned.

Remove from the oven and let cool in the pan for 10 minutes. Then, run a knife around the edges to loosen the cheesecake from the sides of the pan.

Allow the cheesecake to cool completely in the pan on a wire rack. Once cooled, refrigerate for at least 2 hours, or overnight.

Before serving, remove the sides of the springform pan. Garnish with whipped cream and fresh mint leaves, if desired.
