  1. Preheat the oven to 180°C (350°F) and line a baking pan with parchment paper.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Stir in the vanilla extract.
  4. Gradually add the flour and mix until well combined.
  5. Divide the dough in half.
  6. In one half, mix in the cocoa powder until fully incorporated.
  7. Press the white shortbread dough into one side of the prepared baking pan, and press the chocolate shortbread dough into the other side.
  8. Bake for 25 minutes or until golden brown.
  9. Allow the shortbread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. Once cooled, cut into wedges and serve.
