In a microwave-safe bowl, melt the chocolate in 30-second intervals, stirring until smooth.

In a separate bowl, whisk together the confectioners' sugar, water, corn syrup, and vanilla extract until smooth.

Spread half of each cookie with the chocolate glaze and the other half with the vanilla glaze. Allow the glazes to set before serving.
