Chop the bittersweet chocolate into small pieces.

In a saucepan, heat the heavy cream over medium heat until it starts to simmer.

Remove the saucepan from heat and add the chopped chocolate. Let it sit for a minute.

Stir the mixture until the chocolate is completely melted and smooth.

Add vanilla extract and unsalted butter to the mixture. Stir until well combined.

Transfer the ganache to a bowl and let it cool to room temperature.

Cover the bowl with plastic wrap and refrigerate for at least 2 hours.

Once chilled, remove the ganache from the refrigerator and let it sit at room temperature for 10 minutes.

Using an electric mixer, beat the ganache until it becomes light and fluffy.

Gradually add powdered sugar while continuing to beat until the ganache reaches desired consistency.
