  1. In a mixing bowl, combine the Biscoff spread, peanut butter, powdered sugar, butter, vanilla extract, and salt. Mix until well combined.
  2. Shape the mixture into small balls and place them on a parchment-lined baking sheet. Place the baking sheet in the refrigerator for 30 minutes to chill.
  3. In a microwave-safe bowl, melt the chocolate chips and coconut oil in 30-second intervals, stirring in between, until smooth.
  4. Using a toothpick or fork, dip each chilled ball into the melted chocolate and coat it completely. Place the coated balls back on the baking sheet.
  5. Return the baking sheet to the refrigerator for another 30 minutes to allow the chocolate to set.
  6. Serve the Biscoff Buckeyes chilled and enjoy!
