Cut the butternut squash in half lengthwise and remove the seeds.

Place the squash halves on a baking sheet, cut side down, and roast in the preheated oven for 45 minutes or until tender.

Remove the squash from the oven and let it cool. Once cooled, scoop out the flesh and discard the skin.

In a large bowl, combine the butternut squash flesh, brown sugar, cinnamon, nutmeg, ginger, salt, eggs, evaporated milk, and vanilla extract. Mix well.

Pour the mixture into the pie crust and smooth the top.

Bake in the preheated oven for 15 minutes, then reduce the oven temperature to 350°F (175°C) and continue baking for an additional 40-45 minutes, or until the pie is set.
