  1. Preheat the oven to 400°F (200°C). In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. Cut the cold butter into small cubes and add it to the dry ingredients. Use your fingers or a pastry cutter to cut the butter into the flour mixture until it resembles coarse crumbs.
  3. In a separate bowl, whisk together the heavy cream, egg, and vanilla extract. Pour the wet ingredients into the dry ingredients and gently mix until just combined.
  4. Gently fold in the mixed berries, being careful not to overmix.
  5. Transfer the dough onto a lightly floured surface and shape it into a 1-inch thick circle. Cut the circle into 8 equal wedges.
  6. Place the scones onto a baking sheet lined with parchment paper. Bake for 18-20 minutes or until golden brown.
  7. Remove from the oven and let the scones cool for 10 minutes before serving.
