  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
  2. In a medium bowl, mash the ripe bananas until smooth.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  4. In a large mixing bowl, cream together the unsalted butter and granulated sugar until light and fluffy.
  5. Beat in the egg and vanilla extract until well combined.
  6. Gradually add the mashed bananas to the butter mixture, mixing well.
  7. Alternate adding the dry ingredients and milk to the banana mixture, beginning and ending with the dry ingredients. Mix until just combined.
  8. Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
  9. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  10. Remove from the oven and let the cupcakes cool in the pan for 5 minutes.
