Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.

In a large bowl, mash the ripe bananas until smooth.

Add the flour, sugar, baking powder, baking soda, salt, cinnamon, egg, vegetable oil, and vanilla extract to the bowl with the mashed bananas. Mix until well combined.

Fold in the crunchy cereal and chopped nuts (if using).

Divide the batter evenly among the muffin cups, filling each about 2/3 full.

Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Remove the muffins from the oven and let them cool in the tin for 10 minutes.

Transfer the muffins to a wire rack to cool completely before serving.
