  2. In a large mixing bowl, mash the ripe bananas with a fork.
  3. Add the all-purpose flour, granulated sugar, unsalted butter, eggs, baking soda, salt, vanilla extract, and Greek yogurt. Mix well until combined.
  4. Pour the batter into the prepared loaf pan.
  5. In a small bowl, combine the all-purpose flour, brown sugar, unsalted butter, and ground cinnamon. Mix until crumbly.
  6. Sprinkle the streusel topping over the banana bread batter.
  7. Bake in the preheated oven for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove from the oven and let it cool in the pan for 10 minutes.
  9. Transfer the banana bread to a wire rack and let it cool completely before slicing and serving.
