Preheat the oven to 350°F (175°C). Grease a loaf pan.

In a mixing bowl, mash the ripe bananas.

In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.

In a large mixing bowl, cream the unsalted butter and granulated sugar together until light and fluffy.

Beat in the eggs, one at a time, then stir in the vanilla extract and coconut rum.

Gradually add the dry ingredients to the butter mixture, mixing until just combined.

Fold in the mashed bananas, shredded coconut, and chopped walnuts.
