  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine cabbage, carrots, bean sprouts, green onions, soy sauce, sesame oil, garlic, and ginger. Mix well.
  3. Place an egg roll wrapper on a clean surface. Spoon about 2 tablespoons of the vegetable filling onto the center of the wrapper.
  4. Fold the bottom of the wrapper over the filling, then fold in the sides. Roll up tightly, sealing the edges with a bit of water.
  5. Repeat with the remaining wrappers and filling.
  6. Brush the egg rolls with vegetable oil and place them on a baking sheet.
  7. Bake for 20-25 minutes or until golden brown and crispy.
  8. Allow the egg rolls to rest for 5 minutes before serving.
  9. Serve hot with your favorite dipping sauce.
