Preheat the oven to 350°F (175°C).

Grease a baking dish.

Cut the bread into cubes and spread them evenly in the baking dish.

Peel and slice the apples, then place them on top of the bread cubes.

In a mixing bowl, whisk together the eggs, milk, maple syrup, sugar, cinnamon, and vanilla extract.

Pour the egg mixture over the bread and apples, making sure everything is coated.

Dot the top with butter.

Bake for 45 minutes, or until the top is golden and the pudding is set.

Remove from the oven and let it rest for 15 minutes before serving.
