  1. Preheat the oven to 325°F (163°C).
  2. In a food processor, crush the graham crackers into fine crumbs.
  3. Melt the butter and mix it with the graham cracker crumbs.
  4. Press the mixture into the bottom of a 9-inch (23 cm) springform pan.
  5. In a large bowl, beat the cream cheese, sugar, and vanilla extract until smooth.
  6. Add the eggs one at a time, beating well after each addition.
  7. Stir in the sour cream.
  8. Peel and slice the apples, then toss them with cinnamon and nutmeg.
  9. Pour half of the cream cheese mixture over the crust.
  10. Arrange the apple slices on top.
  11. Pour the remaining cream cheese mixture over the apples.
  12. Bake for 55-60 minutes, or until the center is set.
  13. Turn off the oven and let the cheesecake cool in the oven for 1 hour.
  14. Remove from the oven and let it cool completely.
  15. Refrigerate for at least 2 hours before serving.
  16. Serve chilled and enjoy!
