  1. Preheat the oven to 350°F (175°C). Grease a round cake pan.
  2. In a small saucepan, melt the butter over medium heat. Add the brown sugar and stir until dissolved. Pour the mixture into the greased cake pan.
  3. Arrange the apricot halves, cut side down, on top of the butter-sugar mixture in the cake pan.
  4. In a mixing bowl, whisk together the all-purpose flour, baking powder, and salt.
  5. In a separate bowl, beat the granulated sugar and eggs until light and fluffy. Add the vanilla extract and milk, and mix well.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Pour the batter over the apricots in the cake pan.
  8. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  9. Remove the cake from the oven and let it cool in the pan for 10 minutes.
  10. Place a serving plate upside down on top of the cake pan. Carefully flip the pan over to release the cake onto the plate.
  11. Serve the apricot upside down cake warm or at room temperature.
