  1. Preheat the oven to 350°F (175°C). Grease and flour a 9x9-inch baking pan.
  2. In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs.
  3. In a separate bowl, beat the eggs and vanilla extract. Add the egg mixture to the dry ingredients and mix well.
  4. Spread half of the mixture evenly into the prepared baking pan. Arrange the apricots over the layer in the pan. Top with the remaining mixture.
  5. Bake for 40-45 minutes, or until golden brown. Allow to cool in the pan before cutting into squares.
  6. Dust with powdered sugar before serving.
