Preheat the oven to 350°F (175°C). Grease a 9x9-inch baking dish.

In a large bowl, combine the all-purpose flour, granulated sugar, rolled oats, ground cinnamon, and salt. Cut in the unsalted butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

Press half of the mixture into the bottom of the prepared baking dish.

In a separate bowl, mix together the apricots, lemon juice, cornstarch, and vanilla extract. Spread this mixture evenly over the crust in the baking dish.

Sprinkle the remaining crumb mixture over the top of the apricot layer.

Bake for 35-40 minutes, or until the top is golden brown.

Remove from the oven and let cool for at least 15 minutes before cutting into squares.

Serve warm or at room temperature.
