Preheat the oven to 350°F (175°C). Grease a baking dish.

Cut the bread into cubes and spread evenly in the baking dish. Slice the apricots and layer them on top of the bread.

In a saucepan, heat the milk over medium heat until hot but not boiling. In a mixing bowl, whisk together the sugar, eggs, vanilla extract, cinnamon, and salt. Slowly pour the hot milk into the egg mixture, whisking constantly.

Pour the milk mixture over the bread and apricots, making sure all the bread is soaked. Press down gently to ensure even soaking.

Dot the top of the bread pudding with butter. Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and the pudding is set.

Remove from the oven and let it rest for 15 minutes before serving. Serve warm with caramel sauce drizzled on top.
