Instructions

  1. Preheat the oven to 425°F (220°C). In a large bowl, whisk together the flour, sugar, baking powder, and salt. Cut the butter into small cubes and add it to the flour mixture. Use your fingertips or a pastry cutter to cut the butter into the flour until the mixture resembles coarse crumbs.
  2. Chop the dried apricots and crystallized ginger into small pieces. Add them to the flour mixture and toss to combine.
  3. In a separate bowl, whisk together the milk, vanilla extract, and egg. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Turn the dough out onto a lightly floured surface and knead it a few times to bring it together. Pat the dough into a 1-inch thick circle.
  5. Use a round biscuit cutter or glass to cut out scones from the dough. Place the scones onto a baking sheet lined with parchment paper.
  6. Bake for 12-15 minutes, or until the scones are golden brown. Remove from the oven and let them cool for 10 minutes.
  7. In a small bowl, whisk together the powdered sugar and enough water to make a thick glaze. Drizzle the glaze over the cooled scones.
  8. Serve the apricot and ginger scones warm or at room temperature.
