Preheat the oven to 190°C (375°F).

Roll out the pie crust and line a pie dish with it.

Peel, core, and slice the apples.

In a bowl, mix the sliced apples, sugar, cinnamon, and lemon juice.

Pour the apple mixture into the pie crust.

Dot the top of the apple filling with small pieces of butter.

Roll out the remaining pie crust and cover the pie.

Trim the edges and crimp to seal.

Make a few slits on the top crust to allow steam to escape.

Beat the egg and brush it over the top crust.

Bake the pie for 45 minutes, or until the crust is golden brown.

Remove from the oven and let it rest for 1 hour before serving.
