Preheat the oven to 375°F (190°C).

Peel and core the apples, then cut them into quarters.

Roll out the puff pastry and cut it into squares large enough to wrap each apple quarter.

In a bowl, mix together the brown sugar, butter, cinnamon, and vanilla extract.

Place an apple quarter on each puff pastry square and spoon a tablespoon of the sugar mixture on top.

Fold the pastry around the apple and pinch the edges to seal.

Place the wrapped apples in a baking dish.

In a small saucepan, heat the water and remaining sugar mixture until the sugar has dissolved.

Pour the sugar syrup over the dumplings in the baking dish.

Bake for 35-40 minutes, or until the pastry is golden and the apples are tender.
