  1. Preheat the oven to 375°F (190°C). Grease a muffin tin or line with paper liners.

  3. Peel and chop the apples. Chop the dates and pecans.
  4. In a separate bowl, beat the eggs. Add the vegetable oil, sugar, and vanilla extract. Mix well.
  5. Add the wet ingredients to the dry ingredients and stir until just combined. Fold in the chopped apples, dates, and pecans.
  6. Divide the batter evenly among the muffin cups.
