  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the flour, sugar, baking powder, cinnamon, and salt.
  3. In a separate bowl, melt the butter and let it cool slightly.
  4. Add the eggs, vanilla extract, and milk to the melted butter and mix well.
  5. Gradually add the wet ingredients to the dry ingredients and mix until just combined.
  6. Fold in the diced apples.
  7. Line a muffin tin with cupcake liners and fill each liner about 2/3 full with the batter.
  8. Bake for 20-25 minutes or until a toothpick inserted into the center of a cupcake comes out clean.
  9. Remove from the oven and let the cupcakes cool in the tin for 10 minutes.
  10. Transfer the cupcakes to a wire rack to cool completely.
