In a medium saucepan, bring water to a boil. Add steel-cut oats and reduce heat to low. Cook for 20-25 minutes, stirring occasionally.

After oats have cooked for 20-25 minutes, add diced apple, cinnamon, and maple syrup. Stir well and cook for an additional 5 minutes.

Remove from heat and let rest for 5 minutes.
