  1. Preheat the oven to 350°F (175°C). Grease a bundt pan.
  2. Cut each cinnamon roll into quarters.
  3. Peel and chop the apples.
  4. In a small saucepan, melt the butter over medium heat. Stir in the brown sugar, cinnamon, and vanilla extract until well combined.
  5. Place half of the cinnamon roll quarters in the greased bundt pan. Top with half of the chopped apples and half of the brown sugar mixture. Repeat with the remaining cinnamon roll quarters, apples, and brown sugar mixture.
  6. Sprinkle the chopped pecans on top.
  7. Bake for 30 minutes or until golden brown.
  8. Allow the monkey bread to cool in the pan for 10 minutes before inverting onto a serving plate.
  9. Drizzle the icing from the cinnamon roll dough package over the monkey bread.
  10. Serve warm and enjoy!
