Apple Cheddar Palmiers
Palmiers, also known as elephant ears, are a popular French pastry that gets its name from its palm leaf shape.

Preheat the oven to 400°F (200°C).

Roll out the puff pastry sheets into rectangles.

Spread Dijon mustard evenly over the pastry sheets.

Sprinkle grated Cheddar cheese over the mustard.

Peel and thinly slice the apple.

Arrange the apple slices evenly over the cheese.

Season with salt and black pepper.

Starting from one long side, tightly roll up the pastry sheet, jelly-roll style, to the center.

Repeat with the other long side, so the rolls meet in the middle.

Cut the rolled pastry into 1/2-inch thick slices.

Place the slices on a baking sheet lined with parchment paper.

Brush the slices with beaten egg.

Bake for 12-15 minutes, or until golden brown and puffed.
