Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

In a large bowl, whisk together the flour, sugar, baking powder, and salt.

Cut the butter into small pieces and add it to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.

In a separate bowl, whisk together the egg, milk, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined.

Gently fold in the chopped apple and granola.

Turn the dough out onto a lightly floured surface and knead it a few times until it comes together. Pat the dough into a circle about 1 inch thick.

Use a sharp knife or a biscuit cutter to cut the dough into 8 wedges.

Transfer the scones to the prepared baking sheet and bake for 18-20 minutes, or until golden brown.
